- Preheat your air fryer to 350 degrees F for about 5 minutes to ensure an even cooking temperature.
- Carefully slice each chicken breast horizontally through the middle to butterfly them. Be very careful not to slice all the way through; you want to create a deep pocket for the filling.2 Large Boneless Skinless Chicken Breasts
- In a small bowl, combine the sea salt, pepper, garlic powder, paprika, and 21 Seasoning Salute. - In another small bowl, mash together the softened cream cheese, shredded mozzarella, and shredded Colby Jack until well combined.2 Oz Cream Cheese, 1/2 Cup Mozzarella Cheese, 2 tablespoon Colby Jack Cheese
- Divide the cheese mixture between the two chicken breasts, spreading it in an even layer. Try to keep the cheese centered, leaving the very edges of the chicken bare.
- Fold the top half of the chicken back over the cheese. Use toothpicks to secure the edges firmly. This step is vital to keep the cheese from escaping during the cooking process.
- Place the stuffed chicken breasts into the air fryer basket. Cook at 350 degrees F for 20 to 25 minutes. The chicken is done when the internal temperature reaches 165 degrees F.
- Carefully remove the chicken with tongs, let it rest for a minute, and serve warm.
Notes
Use the toothpick method to seal the edges firmly, potentially wetting them with water and flour for extra security, to prevent cheese from escaping. Don't forget to season the inside of the chicken pocket for maximum flavor.
