  • 2 Lbs Flank Steak
  • 1/2 Yellow Onion Sliced
  • 1/2 Cup Chicken Stock or Water
  • 1 tablespoon Lime Juice
  • 1 tablespoon Lemon Juice
  • 1 tablespoon Honey
  • 5 Cloves Garlic Minced
  • 1 tablespoon Chili Powder
  • 1/2 teaspoon Oregano
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Sea Salt
  • 1/2 teaspoon Ground Black Pepper
  • 24 Flour Tortillas Taco Size
  • Fresh Cilantro
  • Homemade Salsa
  • Shredded Mexican Cheese Optional
  • Sour Cream Optional

Method
 

  1. Start by slicing the flank steak against the grain into thin strips and place them into a large prep bowl.
  2. Add the sliced yellow onion, lime juice, lemon juice, honey, minced garlic, chili powder, oregano, cumin, paprika, salt, and pepper to the bowl.
  3. Stir the ingredients well to ensure the meat is evenly coated, then cover and marinade in the refrigerator for at least 20 minutes or up to 2 hours.
  4. When you are ready to cook, add the marinated steak, onions, and all liquid from the bowl into the Instant Pot along with the chicken stock or water.
  5. Secure the lid and turn the steam release nozzle to the Seal position.
  6. Cook on High Pressure for 4 minutes, then allow for a natural release for 10 minutes.
  7. After 10 minutes, perform a quick release for any remaining pressure. Once the pin drops, carefully open the lid.
  8. Remove the steak from the Instant Pot, drizzle with a small amount of the excess cooking liquid, and then dice or shred as desired.
  9. Once your steak is prepared, serve it inside warm tortillas with your favorite optional toppers.

Notes

Slice the flank steak against the grain to ensure the meat is tender. For crispy edges, broil the cooked meat on a baking sheet for about 1 minute.
