Ingredients

  • 3 Small Bananas just ripe and firm
  • 1 tablespoon Unsalted Butter
  • 2 tablespoons Honey raw or regular
  • 0.5 teaspoon Ground Cinnamon

Equipment

  • Skillet (Stainless steel or stone)
  • Rubber fish spatula

Method

  1. Begin by slicing your bananas into even 1/2 inch thick rounds. It is best to slice them straight across rather than at an angle to ensure even cooking. Discard the very ends of the bananas.
    3 Small Bananas
  2. Place a medium to large skillet over medium-low heat. Add the unsalted butter, honey, and ground cinnamon to the pan.
1 tablespoon Unsalted Butter, 2 tablespoons Honey, 0.5 teaspoon Ground Cinnamon
  3. Stir the mixture as the butter melts. Once the liquid is warm and begins to bubble slightly, it is ready for the fruit.
  4. Carefully add the banana slices to the skillet in a single layer. Cook them for 3 to 5 minutes, or until the bottoms are beautifully caramelized and golden.
    3 Small Bananas
  5. Use a spatula to gently flip each banana slice. Continue to cook for an additional 3 to 5 minutes on the second side.
  6. Reduce the heat to low if the honey mixture begins to darken too quickly. Once cooked through, remove the bananas from the pan and serve them while they are still warm.

Notes

Best enjoyed immediately while warm, as the texture changes when refrigerated. For infants under one year, substitute honey with maple syrup.
